I think that it’s important to point out that consuming fruits and vegetables in any of the above manners is important. And although I’m going to discuss some pros and cons of some of the methods, a serving of veggies is a serving of veggies. Whether it’s canned, frozen or fresh the produce will still contain some nutrients despite the amount of processing.
The common belief would be that fresh is best. Most people don’t realize that from the time the produce is picked until the time that it hits your dinner plate can be up to 2 weeks. Over the course of those 2 weeks 10 to 50 percent of the less stable nutrients have disappeared.
