Pork, Moroccan Quinoa and Curly Kale

This recipe has been inspired by Deliciously Ella, which has now become my favorite recipe book! Stocking my fridge and cupboards with clean, healthy, wholesome foods, my aim is to create tasty, balanced meals without breaking the bank. Here is my first of many creations. Any feedback on clean eating and what you think of my recipe would be greatly welcomed, enjoy!

Ingredients

Serves 1

  • Extra Lean pork loin Medallions (I purchased mine from Aldi £2.79 for 4)
  • 3 tbs Quinoa boiled for 20 mins
  • 1/2 ts Garlic Puree
  • Handful of Curly Kale
  • Small amount of Fresh Mint roughly chopped
  • Sprinkle of Sunflower Seeds
  • Half a red chili de-seeded
  • Olive Oil
  • Half an apple, peeled and chopped
  • Handful of sultanas, chopped
  • Half a red onion, chopped
  • Half a lemon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika
