Probably the freshet quinoa salad you will ever taste
This is my mom’s signature quinoa salad. It is super easy to make and goes as a side dish with almost everything.
Preparation time: 15 min
Yield: 6 to 8 servings
1 cup of quinoa
1 fresh red pepper
7 large pickled cucumber
2 1/2 cups of fresh baby Spanish
1 tps of pine nuts
2 tps of olive oil
pinch of salt
To cook the quinoa, similar to making pasta, bring water to a boil in a large saucepan. Add the quinoa, stir once, and return to a boil. It’s important to let it cook uncovered over medium heat for about 10 minutes – you will notice that the seed will open. Strain the quinoa and rinse well with cold water. Make sure to remove all water and moist before placing the quinoa in a large bowl.
